You can’t go wrong with this family favorite.



Prep. Time Yield

  • 2 tbsp. Badia Complete Seasoning

  • 1 whole chicken

  • 4 tbsp. Dijon mustard

  • 3 lemons (juice and zest)

  • ½ cup finely chopped fresh parsley

  • 3 stalks fresh parsley

  • 5 tbsp. Badia Olive Oil

  • 2 plum tomatoes

  • 2 cups parboiled white rice

  • 6 cups water

  • 1 tbsp. salt

  • Mixed greens



Roasted Whole Chicken Preparation


  • Place the chicken on a baking tray; rub in Badia Complete Seasoning

  • Mix the Dijon mustard, lemon juice and zest

  • Rub this mixture on to the chicken, place a few slices of lemon inside and on top of the chicken, together with the juice of half squeezed lemon to enhance the flavor

  • Pour olive oil around the chicken and set 5 tbsp. Badia Olive Oil aside for 30 minutes

  • Then roast it at 360 degrees for 45 minutes until golden brown

  • Remove from the oven and set aside for 5 minutes before serving

Rice Preparation


  • Cook the rice in water with parsley stalks and salt for 35 minutes or until the water has evaporated.

  • When done, add finely chopped parsley and roughly chopped plum tomatoes


  • Place chicken on a platter

Serve seasoned mixed greens and rice in separate bowls.
